Welcome to Feeding Seven, a little mini-series I’ll do about how I feed our family of seven people, and find joy in it! These meals are so simple and quick that I’m going to type these articles while cooking them. Keeping it short and sweet for you guys!
I’m starting off with one of my favorites: baked ranch casserole.
I actually tried finding this recipe online and I can’t. My mom used to make it when I was a kid, and she taught me via FaceTime how to make it when I was in college. My first few memories of this meal are actually me hating it (sorry Mom), but the switch flipped somewhere along the way, and this was the meal I requested every year for my birthday. In fact, I’m making it right now because it’s what my husband requested for his birthday today! And the kids all cheered when they found out it’s what we’re having. Win-win-win.

Here’s what you need:
- 1 pound of hamburger meat
- 1 packet taco seasoning
- ¾ C water
- can of corn, strained
- can of baked beans, not strained
Here’s what you do:
- Brown hamburger meat and follow instructions on taco seasoning packet
- Add in corn and baked beans, simmer on low until you’re tired of waiting
- Eat!!
Technically, you can put it in a casserole dish, top with cheese and crushed chips, and bake it. But over the years, this step was gradually abandoned and forgotten in favor of eating the dish withtortilla chips after we top it with cheese. But do whatever you wish! It could also probably be eaten in tortillas. But we normally eat it dip style.
Our kids are ages 8, 5, 5, 5 months, and 5 months, and we’re almost to the point where we have to double it, just fyi. Also yes, I realize this recipe is neither baked nor has ranch. I didn’t name it, I’m just the messenger!
